ROAST BEEF + MUSHROOM EGG PACKETS

ok, so this past holiday season i went a bit overboard with hosting brunches. i am now a seasoned pro!  (well, at least i think so…)

all in all i had friends and family over for about 4 different after breakfast/before lunch meals during the two week holiday period and since there was some overlap of guests i wanted to keep things interesting. i came across this recipe and decided to take on the challenge. i made a few adjustments and additions here and there as i tend to do with recipes and this is what i came up with -

the original recipe calls for a crepe packet, which sounded lovely, but more of a thing a person with more time to experiment would tackle. i actually thought the crepe was phyllo pastry from original picture, and so used that instead. i really wanted to sub in puff pastry, but i couldn’t get my hands on it. anyway, enough backstory. on to the recipe!

(disclaimer – i have never really put together a formal recipe so my quantities are lacking. i’m of the little of this, little of that school of thought. i promise to work on it.)

ROAST BEEF + MUSHROOM EGG PACKETS

all you need is:

  • mushrooms, sliced
  • worsteshire sauce
  • fresh rosemary
  • salt and pepper
  • phyllo pastry
  • melted butter
  • eggs
  • deli style roast beef
  • sundried tomatoes (optional)
  • chopped fresh rosemary

and what you have to do is:

  • preheat the oven to 350 degrees.
  • sautee the mushrooms with a few shots of worsteshire sauce, fresh rosemary, salt and pepper. set aside.
  • brush butter onto each sheet of phyllo pastry, working with 3-4 at a time. lay them one on top of the other. cover remaining sheets of phyllo with a damp cloth.
  • with scissors cut the stack of 4 into 4. you’re going to work with a 1/4 stack for each packet.
  • lay your 1/4 stack onto a rimmed baking pan. place a piece or two of roast beef in the packet, then a spoonful of mushrooms and a few sundried tomatoes for good measure. lastly crack your egg onto the phyllo packet and quickly fold up the edges to contain it. season with chopped rosemary, salt and pepper.
  • repeat the process for as many eggs as you want, then bake for 10-13 minutes or until the egg has set. serve and eat right away! (or prep in advance, keep in a warm oven and serve when you want!)

it takes some time to prepare each of the packets, but they’re really worth it. they look beautiful and taste delicious. and you can easily swap in or out different veggies and meats for a different feel. think sauteed spinach and goat cheese or roasted red peppers and hot salami. mmmm.
